Delicious Dinner

I made a delicious dinner the other night. I made bourbon chicken and served it over rice with salad. It was very good and I got 2 positive reviews from the hungry boys I fed. : )

Here is the recipe:

Bourbon Chicken

1-2 pounds cubed chicken

Wet ingredients:

2 teaspoons worcestershire sauce

1 tablespoon orange juice

1 tablespoon red wine vinegar

1 tablespoon butter

2 tablespoons ketchup

2 tablespoons olive oil

2-3 tablespoons white wine

¼ cup soy sauce

½ cup apple juice

½ cup water

Dry ingredients:

¼ teaspoon garlic powder

½ teaspoon crushed
red pepper flakes
1 teaspoon honey

½ cup brown sugar
dash salt and pepper

Brown the chicken in a skillet with ½ of the olive oil and the butter. The chicken does not have to be cooked through all the way; it will finish cooking in the sauce. Remove the chicken from the pan and set aside.
Pour the water in the pan and scrape off any chicken bits that may have stuck to the pan. Then add all the wet ingr
edients, whisking to incorporate. Once combined, add dry ingredients.

Whisk until all ingredients are dissolved.
Let sauce simmer for a couple minutes before adding the chicken back. Let the chicken simmer in the sauce for up to an hour. Add in small amounts flour combined with water to thicken the sauce if needed.

I came up with this recipe by combining a couple that I found online.

I wanted my sauce to be really thick, so I added some flour (pre-whisked into cool water, of course). I added a little extra red pepper to mine, and it ended up being the perfect amount of spice for the boys - a little too much for me.
