Meal Planning: Week 7

 {aren't easter m&m's so fun!}

Last week's meals proved to be successful. My favorite was the veggie/italian sausage pasta - in which I forgot the sausage. Ha!

I roasted butternut squash, zucchini, and onion drizzled with olive oil and lightly salted and peppered. Then I made wheat penne pasta, and put a very small amount of salt in the water. I strained the pasta, but left a little pasta water in the bottom of the pan and returned it to the stove, but turned the heat down to the lowest setting. I added grated parmesan cheese and mixed it with the warm pasta and water - so it turned into a parm sauce (yum!). I ended up needing more liquid, so I used chicken stock instead of plain water. Then I removed the veggies from the oven and spooned them into the pasta, and lightly mixed it together.

I especially liked the butternut squash flavor with the pasta and cheese, but it was all good. I'll make this again, and maybe with a different variety of veggies and the sausage next time. : )

So with out further ado, here is this week's meals:

BBQ take-out
Italian Beef w/salad
Glazed Pork Tenderloin w/ rice and broccoli

This week is a busy one for Steven, so I am only planning on cooking 2 meals this week. It would be 3 except I didn't get to the grocery store yesterday. So tonight we are having BBQ take-out and I'll get to the store. The other nights we'll have left-overs or whatever else we can scrounge up.

I'd also like to point out that it has been 7 weeks and I have not repeated a meal yet! Pretty amazing to me since I used to make the same few things over and over. I'm going to keep searching for new things to make until I run out.
