jalapeno popper dip

I made a jalapeno popper dip last weekend for the small football watching party we held. Of course, I was at the handmade market, so I walked in the door after everyone had already polished off the dip - apparently in .75 seconds.

I originally found the recipe on another blog, but I changed it up so it was a little easier. Here is my version.

jalapeño popper dip
2 8 oz packages cream cheese (we use the fat free version), at room temperature
1/2 cup mayonnaise
2/3 cup roasted red bell peppers, chopped
6 jalapeño peppers, seeded, ribbed and finely diced (we used 3 jalapeños and 3 banana peppers)
1 tsp garlic powder
2 T lemon juice
1 1/2 cups Mexican blend shredded cheese
1 tsp ground red pepper
1 cup bread crumbs

Preheat oven to 350 degrees.  Combine everything except the bread crumbs. I worked with the cream cheese and mayo first to make sure there weren't any huge lumps. Spread it evenly into a dish and top with the bread crumbs. I used fresh jalapenos and jarred red peppers.

I added more of some things to make up for the lack of others. I used my 1.75 quart le creuset baking dish that I got at Marshall's. I don't think I showed that to you yet, but you can guarantee that it matches my other green pieces. Everyone told me it was amazing. I don't do spicy foods, so I didn't even try it. Not that I could have since it was gone by the time I got home. But I'll take that as a compliment. : )

I need to load more items into my etsy shop, but it is dark by the time I get home from work so I have been having trouble getting photos. Hopefully I'll have some sunlight tomorrow so I can get everything else photographed and listed.

I hope everyone has a great weekend! Winter is arriving here... it's supposed to be 48 tomorrow. Brr!

xoxo, christa

  1. Oh my gosh that looks SO SO SO SO good! Maybe I'll make it tomorrow for my Harry Potter marathon.

  2. Oh my word that sounds heavenly!

  3. I agree with most of your points, but a few need to be discussed further, I will hold a small conversation with my buddies and perhaps I will look for you some opinion shortly.
