chocolate & peanut butter no-bake cookies
I remember having no-bake cookies in the school cafeteria all the time. We never made them at home, but everyone loved no-bake cookie day at school. After reading a few blog posts about them, I was craving them.
It took me less than thirty minutes from start to finish - definitely an easy treat!
Chocolate & Peanut Butter No-Bake Cookies
2 cups of sugar
4 tablespoons of cocoa powder
1/2 cup of milk
1 stick of butter
1 cup of peanut butter
1 tablespoon of vanilla
3 cups of quick-cook oats
Prep time: 10 minutes
Cook time: 10 minutes
1. In a saucepan, combine sugar, cocoa powder, milk, and butter. Allow ingredients to come together before bringing to a boil.
2. After mixture boils, turn off the burner and add the peanut butter and vanilla, stirring until smooth.
3. Dump in the oats into the pot.
4. Stir until all oats are covered.
I used an ice cream scoop to portion out the cookies. Just scoop the cookies onto wax paper or a silpat until they cool and harden.
After they cooled, I layered them in a container, separating them with wax paper. I'm storing them in the fridge, but they don't need to be refrigerated.
They are yummy, and just like I remembered! I know my co-workers will appreciate the batch I'll be taking them on Tuesday. :)
And now I am back to cleaning and laundry!
