baked spinach & pesto pasta


Another yummy and simple dinner idea! I was trying to figure out a way to use up a jar of pesto so I thought up this dish.


I made a large amount so we would have some leftover for lunches. :) Here is what I did:

baked spinach & pesto pasta
1 16 ounce box of penne rigate pasta
4 heaping tablespoons of pesto
16 ounces of frozen spinach, defrosted
1/4 cup of fresh basil, julianned
2 cups of shredded mozzarella cheese
1/3 cup of shredded parmesan cheese

Preheat your oven to 375*. Cook the pasta according to instructions on box. Strain and return to the pot. Add the pesto and mix well. Then add the spinach, basil, parmesan, and 1 1/2 cups of the mozzarella {reserve a 1/2 cup for the top} and mix well. Then pour into a 9 x 13 dish, sprinkle with the remaining cheese and bake for 15 minutes.

Of course the ingredients are exchangeable with others. I meant to cut up some left over chicken from the night before to add in... but I totally forgot. Oh well.

I made a little modification to our crescent rolls as well. I placed the dough on the baking sheet and sprinkled it with a little Jane's Krazy Mixed-Up Salt {our favorite seasoning, we use it on everything!} and some garlic powder, then baked as normal. They we're very tasty!

These photos also debut my new plates! I've been wanting white dishes for a long time, thanks to a sale at kohl's I finally got them.

I'm going to come up with a non-pasta dish for my next recipe. :)
