raspberry lemonade cupcakes


I made these delicious treats for yesterday's fourth of july festivities!


I wanted something red, white, and blue-ish, so I made thought up these raspberry lemonade cupcakes! I popped a blueberry on top to get my blue element. :)


Everyone enjoyed them, and they were easy to make, too! Here's how I did it:

lemon cake
1 box of lemon cake mix + ingredients called for on the box
1 large lemon

Mix cake batter according the instructions on the box. Zest and juice the entire lemon and add it to the cake mix. Bake according to box instructions.

raspberry buttercream 
1 container of buttercream frosting
3/4 cup fresh raspberries
1-2 cups powdered sugar

Empty the frosting into mixing bowl and add the fresh raspberries. You'll need to add some powdered sugar to the frosting to thicken it up since the raspberries will add a lot of moisture. Keep adding the powdered sugar until you are happy with the consistency. Just think about how it was when it came out of the container. {Or you can make frosting from scratch. I like this recipe.}

I used a piping bag to frost my cupcakes after they cooled. I left them in the fridge until I was ready to serve so the buttercream didn't melt off. I added the blueberries when I pulled them out of the fridge and we were about to leave the house.

The fresh raspberry bits in the frosting were so yummy, and kind of refreshing. I will definitely make these again!
