teriyaki chicken quesadillas

I know I'm not the first to do this, but I decided to throw our teriyaki chicken into some tortillas at the last minute last week. I think it's now one of our favorites!

We eat chicken more than any other protein. It's inexpensive, easy to cook and goes with pretty much everything. We just cut the chicken into small strips, marinade overnight with lawry's teriyak and cook the chicken with all the marinade. The sauce will reduce and coat the chicken nicely.

We had it with a good portion of steamed asparagus, our second favorite vegetable after broccoli.

I love how easy this is. We make teriyaki chicken all the time and never thought of this before! It would be great for leftovers, too.
