mimosa punch

A couple weeks ago I had a gathering at my house. A Stella & Dot party actually... so my house was full of pretty jewelry and beautiful friends. I don't think anything can beat that.

It was during dinner time so I wanted to provide some healthy-ish snack options, not sweets. So I had some veggies and ranch dip, chips and salsa, and my super yummy spinach dip. And it was after work, so I had to provide a cocktail! I came across this recipe for mimosa punch and my mouth started watering.

But there were two problems. One, the recipe made a giant batch and I wasn't sure how many people were actually going to come. Two, Grand Marnier costs a fortune {to me anyway} so I needed to modify that bit. So I played around with it and came up with this.

modified mimosa punch
4 to 5 parts orange juice
1 part peach schnapps
2 parts champagne
1 part ginger ale 

Dump everything in a pitcher and serve over ice with an orange slice. You can change your unit of measure to make the amount of punch you want.

I think that was the easiest recipe I've ever posted! ;) There are a couple of things... if you want to make it ahead of time, just wait to add the champagne at the last minute. You can do less or more orange juice depending on how you like the champagne flavor. The peach schnapps obviously isn't the same as the orange liquor, but it just provides a subtle hint of peach that adds to the depth of flavor.

When I'm out at a restaurant or bar my go-to drink is either a vodka tonic with lime or a fuzzy navel. What's your favorite go-to cocktail?

  1. Boyfriend and I just bought OJ and forgot the champagne. What's the point!?

    1. I recently had a 'virgin mimosa' at a public event. They used white sparking grape juice and it was surprisingly tasty! I've thought about having it on weekdays... :)
