simple shredded chicken tacos


I feel like I say this every time I post a recipe, but holy cow are these delicious! Perfect level of spiciness, super moist, tender and so easy to make.


You could use the chicken for quesadillas, enchiladas, burritos... you name it.

shredded chicken tacos
1 package of taco seasoning {I used low-sodium}
1 16 oz. jar salsa {I used mild}

1-2 cups water {depending on how much liquid your salsa has}
1/2 cup cream cheese {optional}
3 boneless, skinless chicken breasts
10-14 small flour tortillas 
your favorite taco toppings

Dump the salsa, water, cream cheese and taco seasoning into a crock pot and give it a stir to blend the sauce together. Add the chicken breasts, mix it around, and put the lid on. Cook on high for 4 to 6 hours, or on low for 6 to 8 hours. When there is about 30 minutes of cooking time left, stir the chicken with a fork - it should shred easily. Mix into the sauce and let it simmer for the remaining cook time. 


Put the chicken and your favorite toppings in a tortilla shell and eat 'em all up! All I used was some of that delicious white queso dip I just posted about and a handful of fresh, shredded romaine lettuce. Pure yummy-ness. 

You should try this for dinner tomorrow. It's that good.
