cheesy quinoa

One of our favorite quick meals is homemade mac & cheese. Sometimes we add a veggie or ham to the mix. Veggies are healthy, ham is good enough for you, in the right form, dairy is good, but pasta is just a carb-loaded starch. I thought I would attempt to boost the nutritional value of our go-to mac & cheese by trading out the pasta for some quinoa {pronounced keen-wah}.

I have been looking for quinoa at the store but could only find pre-flavored boxes, the plain was always sold out. Then I finally found it last week! There was one bag left on the shelf. I found it in the organic section, in the gluten free aisle.

I made it according the package instructions, except I replaced the water with low-sodium chicken stock and sprinkled in a little pepper and garlic powder. Once it was done, I stirred in about a cup of shredded cheese. It seemed a little dry, so I added another little splash of chicken stock.

It was really good! Obviously not the same as pasta, but we both really liked it. I'm looking forward to swapping other ingredients for healthy alternatives.

  1. I've never tried quinoa... I'm so picky I don't think I'd ever even given it a second glance.

  2. I love Quinoa! I use it in stuffed green peppers or in my salads. It's become my go to instead of white rice. So much healthier!
