maple oatmeal cookies


The end of the school semester has arrived and my students are busy studying for finals, some even preparing for graduation and the real world. We always plan a 'food day' at the end of each semester to celebrate and maybe even to help us cope with the stress and changes.


Along with the healthy bowl of cucumber and tomato salad, I had to bring a sweet snack. And these cookies were good! I'm a huge maple fan, so maybe I'm biased. :)

maple oatmeal cookies
3/4 cup room temp butter
1 cup light brown sugar
1/2 cup sugar
1/4 cup pure maple syrup
1/4 cup water
1 egg
1 tsp pure vanilla
3 cups rolled oats
1 cup AP flour
1 tsp salt
1/4 tsp baking soda

Preheat oven to 350*. Beat together the butter and both sugars. Add syrup, egg, vanilla and water. Combine oats, flour, salt and baking soda. Slowly add the dry mixture into the wet, making sure it is well combined. Drop a tablespoon of cookie dough onto a baking sheet, two inches apart from the others. Bake for 11 minutes, rotating the sheet halfway through. Allow cookies to cool slightly before moving them to a cooling rack.

It it pretty hot out there, better just make it a la mode. Grab a bowl of vanilla ice cream and chow down. :)
