cookies & cream cupcakes
It's been a while since I've had an occasion to bake something fun. Then I decided that sharing cupcakes with friends on a whim was occasion enough. :)
Cookies and cream is one of my favorite flavors of anything. Those Hersey's chocolate bars, ice cream, milkshake, cheesecake... why not cupcakes? They're super easy, too.
I used a chocolate cake mix and prepared it according to the box instructions. Except, I replaced the oil with apple sauce. Same result, a smidge healthier. :) Then I used a large ice cream scoop to portion out the batter. Bake according to the instructions, but check with a toothpick to make sure they are done.
cookies & cream butter cream frosting
2 sticks unsalted butter, softened
3 cups confectioners' sugar
1 teaspoon pure vanilla extract
2 Tablespoons cold milk
1/2 cup oreo crumbs
Beat the butter until it's fluffy, then slowly add the sugar. Once combined well, add the vanilla and milk. If you think it's too thin, add a bit more sugar. If it's too thick, add a bit more milk. Once you have the consistency you want, add the oreo crumbs and mix in.
I refrigerated my frosting for a bit before putting in the pastry bag, just to help it firm up a bit more. After I iced the cakes, I rolled them in more oreo crumbs. Yummm. Don't roll them in crumbs unless you'll be serving them shortly - they can get mushy and un-tasty. I stuck a few mini-oreos in some of the cupcakes, too. Extra little treat.
