summer treats: brownie parfaits

It's no secret that I love ice cream, cake, sorbet, pie, bread pudding, or any dessert really, I won't lie. It seems that I always have room for dessert, no matter how full I am after dinner. I always tell Steven that I have a separate dessert stomach. :)

During a shopping trip, I was wandering the frozen dessert isles and my eyes stopped on the COOL WHIP Whipped Topping. My Grandma always used it for a few holiday treats, including my favorite - pistachio salad. Grandma and I were probably the only two who ate it, but we had it every year and got to share the leftovers - lucky us! I'm sure I'll continue to make pistachio salad for every holiday meal, only to eat it all myself. But it will be worth it to relive all the great memories.

Feeling nostalgic, I grabbed the COOL WHIP and tossed into my cart. I didn't quite have a plan, but I knew I would use it for something.


A couple days later, I had some friends coming over for dinner and I wanted to make a simple dessert for us. I had some fruit in the fridge and there are always some graham crackers or nilla wafers in the house, so I mixed up some yummy dip using COOL WHIP and nutella. Everyone loved it. I liked it best with bananas.


The next day my sister, Katie, came over for some sister time after she returned from her week-long vacation. We like to have a treat and watch TV together, so I baked a pan of brownies. When I reached into the fridge for the eggs, I saw the leftover dip. A light bulb went off. I gathered the leftover dip, some plain COOL WHIP and caramel sauce to layer with the freshly baked brownies. Oh so YUM.
 
nutella & COOL WHIP dip
1 12 ounce container of COOL WHIP
3/4 cup of Nutella

COOL WHIP & brownie parfaits (serves 2)
1 cup COOL WHIP
1 cup nutella & COOL WHIP dip
12 brownie bites - I cut mine into 1-inch cubes
4 Tbsp caramel sauce (optional)

Layer it all together in any order you want. I did COOL WHIP, left over dip, brownies, caramel and repeated three times. I topped it off with a dollop of COOL WHIP. You can eat it right away or refrigerate it until you're ready for a treat.

I loved that I used up the leftover dip for another recipe, nothing went to waste. And I could easily throw together a couple of parfaits anytime, such easy ingredients!
