strawberry rhubarb sauce

Strawberry rhubarb is probably my favorite flavor combination ever. My Grandma made a mean strawberry rhubarb pie and would let me eat as many slices as I wanted because it was my favorite. It was {and still is} the only pie flavor that I really love.

I was craving the sweet and tangy flavor, but I have yet to brave making my own pie from scratch. I knew I couldn't mess up a sauce.

strawberry rhubarb sauce
2 cups frozen strawberries, quartered
2 cups frozen rhubarb stalks, sliced into one inch pieces
1 cup sugar
1/4 cup water

Place strawberries, rhubarb, sugar, and 1/4 cup water in a large saucepan; bring to a simmer over high heat. Cook, stirring occasionally, until the fruit begins to break down, 6 to 8 minutes. You can leave the sauce on longer depending on how chunky you want it. I wanted mine to be fairly smooth, so I left it on for about 15 minutes total.

Pour into a jar or container and refrigerate until cool, at least 1 hour and up to 2 weeks. Spoon strawberry-rhubarb sauce over the yummy coconut cake, or over scoops of vanilla ice cream.

This makes a pretty big batch. I divided mine and froze one half to use later. It's so good, I was temped to just eat it with a spoon... but I refrained.

  1. Yum! My favorite pie is strawberry rhubarb, but I haven't had it in years. If I can find some rhubarb I'll def make this :)

  2. Grandma would be so proud! And, she wouldn't mind if you used a store bought crust to make that pie you're craving:)
