homemade granola

On my never-ending quest to consistently eat smarter and healthier, I've started eating a lot more cereal. In college, my cereal consumption decreased because it was a little difficult to procure a gallon, or even a half gallon, of milk, and even harder to store it in a mini fridge. 

I've tried a few boxed granolas, but I've always wanted to try making my own. I gathered a slew of organic ingredients and set to work.

4 cups rolled oats
1 cup wheat germ
2 cups unsweetened coconut
2 cups slivered almonds
1 cup sunflower kernels
1/2 cup olive oil
1/2 cup honey
1 Tablespoon vanilla extract 
2 teaspoons ground cinnamon
1 teaspoon kosher salt
2 cups of your favorite dried fruit, I used blueberries & papaya for something different

Preheat the oven to 325*. Combine the oats, wheat germ, coconut, almonds, oil, honey, cinnamon and salt in a large bowl, and toss together to coat. Spread evenly on a baking sheet. Bake until golden, 30 minutes, turning it halfway through. Let it cool completely on the baking sheet. Store it in an airtight container and add the dried fruit to order.


I like to eat mine with milk, on yogurt, or even by itself for a quick snack. Sometimes I add fresh fruit, like the peaches in the first picture. So versatile. :)

Looking back, papaya probably wasn't the best choice. It's a little chewy. I'd probably add dried cranberries or raisins next time. I might also add a bit more honey next time because I like when the granola clumps together, but I didn't get much of that. 

Have you ever made granola? I put it off for a while because I thought it would be a lot of work, but the hardest part was getting all the ingredients at the store!

  3. That looks so good! I love love love granola. We tried once to make a peanut butter granola... didn't turn out so well ha.
