tomato, cucumber & feta salad


I ate at a local restaurant with a friend a couple weeks ago, and he ordered the 'red, white & green salad' as an appetizer for us to share. It was so good, the whole time I was wondering why I hadn't ever seen the combination before!


I bought the ingredients to make it at home the next day. I made a big bowl to share with friends while we watched the basketball game. It's a bit healthier than our usual fare... and we're all trying to watch our waistlines.


tomato, cucumber & feta salad
2 pints of cherry or grape tomatoes, cut in half
1 large cucumber, deseeded and diced
2 cups of crumbled feta
3-4 Tbsp balsamic vinegar reduction {try this recipe. I make a bunch and keep it in the fridge}
Salt & Pepper to taste
Serve with toasted pita bread

Super simple. Super delicious. I think we'll be making this one all summer!

I think this would be good with some lettuce in a pita as a sandwich. You could even add some chickpeas, or a side of hummus. Oh, the possibilities! :)
